WHere is a simplified interpretation of a drink featured on a new cocktail list. Designed as a large-volume prepared mix that is loaded with tastes of a Christmas time, rendering it excellent for a holiday party. Reserve the remaining cordial you can use for brunch beverages, sweets, or to mix additional servings of this cocktail.
Bikini Recipe
Makes enough for 10 guests
For the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Drink (makes 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Method
For the Syrup: Combine every ingredients in a pan, heat until it reaches a light boil, agitating so the sugar melts. Next, take off the burner and let it to reach room temperature completely. Transfer into an sterilised bottle, cap it and store in the refrigerator, it will last for around a month.
Preparing the Cocktail Base: Combine all the liquids into a sizeable container, leave to sit for one hour, then pass it through , ideally through muslin, to ensure it's completely strained.
For serving: Measure 85ml of the premix to a mixing glass filled with ice, and agitate carefully for a minute to chill. Strain into a frosted cocktail glass or a similar vessel, garnish with a few cranberries and finish using a quick spritz of mandarin oil above the glass.
